In September 2026, the House takes a new step forward: Pierre Marcolini puts his “Cooking Chocolate” into everyone’s hands. These chocolate discs, until now reserved for professionals, are for the first time making their way into the kitchens of discerning food lovers, ready to elevate their creations and give them all the character they deserve.
A radically different cooking chocolate
Pierre Marcolini’s cooking chocolate is no ordinary melting chocolate… An entirely bean-to-bar production process Pierre Marcolini selects and transforms his own beans from his Brussels workshop, with no intermediaries and no compromise on raw materials. Every bean is rigorously chosen for its unique aromatic profile, guaranteeing a freshness and intensity no industrial chocolate can match.

Three days of craftsmanship, absolute rigor
Turning cocoa beans into ready-to-cook discs takes three days of artisanal work at Pierre Marcolini. Three days during which each origin is roasted according to its own profile, then put through several successive conchings to reveal the most delicate aromas. This rigor makes all the difference: while industrial producers may sell chocolate up to two years after harvest, Pierre Marcolini makes his available right after production — an aromatic freshness the bean carries in full.
